Yes. Sage 100 Standard runs on one Windows Server as it is. Sage 100 Advanced and Premium and Sage 300 keep their data in SQL Server, so they run either on a single server with SQL Server Express, or on two servers joined by a free Raff private network with port 1433 reachable only on that network. SQL Server Express costs nothing and allows 10 GB per database; Standard can be licensed through Raff or you can bring your own.
Sage sets the software ceiling: five licensed named users for Sage 50 Premium, up to forty for Quantum. The server then needs room for each person's Windows session, and one Raff server on the largest plan is sized for about ten people in Sage at once. Beyond that, or with several large company files open together, the answer is a second server on the same private network. Note the two counts are different: the named-user licence is yours from Sage, while the $8.00 Remote Desktop licence is what lets someone sign in to Windows.
Two ways, and you should keep both. Sage's own backup writes a company-file copy nightly to a folder on the server, which is what you restore into Sage and what your accountant can take away. Raff's nightly backup then copies the whole server to separate storage, so a failed disk or a ransomware incident becomes a restore rather than a rebuild.
